So I take the liberty to tell you that my signature dish is 'Spinach Madeline' who is (was) a recent plantation owner in Louisiana although I cannot remember which plantation at the moment. The recipe was first published, I believe, in the Junior League of Baton Rouge's first cookbook 'River Roads'. It fast became a Thanksgiving and Christmas staple and has spread nationally and perhaps even globally.
