What’s for dessert tonight

When my husband and I were out shopping in Amish country yesterday, I picked up something that I haven’t bought for years.

Chocolate wafers. They’re in the bulk section of the grocery store we visited.

And then I came home, decided to hell with the diet, and made these.

I used frozen yogurt rather than ice cream, hoping that would help in the battle against too many calories.

I used to make these all the time when our boys were young. I’d fill them with Breyer’s vanilla ice cream, and for special occasions I’d use their favorite: chocolate chip mint.

Or was that my favorite?

My memory plays tricks with me sometimes.

They’re darn good with Ben & Jerry’s Cherry Garcia Fro-Yo, too.

And they’re extremely simple to make. If you can’t find chocolate wafers, Keebler chocolate graham crackers work just fine.

I always smooth out the edges because I’m such a suzy homemaker.

They’re best eaten a day or two after making them. That way, the ice cream seeps ever so gently into the wafer, making it the perfect texture for biting into.

Is there a simple treat that you like to make?

  1. Well I just happened to be on when you posted. I have never seen those kind of wafers in Canada and we can't get Keebler wafers either but the ones you made look delicious! Probably just as well because I would just eat them. Great idea though!

  2. Now I want some of those wafers!!! I know it just wouldn't be the same with Keeblers choco-covered graham crackers. Jealous??? You betcha!!!! I'm thinking that our oh so delicious Blue Bell ice cream, made just up the road from here in Brenham, TX, would be the best to make these yummie goodies with...especially their strawberry...it's to die for. Their plan old vanilla...homemade vanilla...would be my next choice.

    If ever you come to the Houston area, you must bring some of those wafers with you!!!!

  3. Oh that looks yummy!

    Lately, for a sweet treat, I've been pouring about 2/3 Bolthouse Vanilla Chai and 1/3 low sodium soda water over ice. It's a bit like an ice cream soda, only somewhat healthier.

    And if you want to step away from healthy, try the same chai with vodka or rum over ice.. no soda water. :)

  4. I never knew you could buy chocolate wafers like that to make your own ice cream sandwiches!.. how easy! Choc Chip Mint has always been one of my favorites too.

    I love strawberries dipped in chocolate, real easy and delicious.

    Kate I visited a place today with my camera that you would have gone crazy over with your camera...right now it sits empty so I was able to go around snapping.

  5. Anything with ice cream gets my attention. You know what a whoopie pie is, right? Well now you gave me an idea to stuff ice cream inside instead of the usual filling. I've not seen those wafers here, but they look real good. (The saran wrap you used gave me the idea about the whoopie pies.) ~Lili

  6. I love those wafers - I usually keep them around the house. They make great chocolate crumbs for chocolate crust for cheesecake too.

    Lately I've been making home-made peanut butter cups from The Kind Diet book -- very easy to make which is both good and bad. ;-)

  10. Mmmm...yum.

    I don't really have any treats I make e right now. One of my favs. that I haven't made in awhile is sugar-free white chocolate pudding made with skim milk, mixed with Lite cool whip. It is very low calorie and yummy with low fat graham crackers. :)

  16. I tried Ree's recipe for pecan pie this week-end. It really didn't want to set up. I've decided to try tons of pecan pie recipes until I find a fail safe one that always works. Might not be possible. I'm gonna need to give them away as I bake them though.:)

  17. I think almost everyone I have visited this morning has a treat on it...good thing you can't gain weight just looking....I like to take a cup of no fat low sugar yogurt and put it in the freezer for about 30 minutes...wallla....frozen yogurt...low calories...healthy...and guilt free...

  19. WOW MMMMM ! looks yummy !We dont have those crackers in Canada so I have used honey graham crackers low fat with frozen low fat yogurt and boy oh boy it was goood ! We dont have t Have a great Day !

  20. Yum! These look so refreshing. I had no idea chocolate wafers were even available.

    Another favorite and it's so easy...rice krispie squares. Sometimes they don't even make it into a square shape -- I eat them right out of the pan! :)

  24. Those wafers look incredible!! I have never seen them sold like that! I will have my eye out for them! Easy dessert...... can't believe I'm typing this.... If I'm feeling real rebellious, I dip Oreos in peanut butter. :) SO rich. But, I can't walk away from anything with peanut butter without eating a handful. Or pan full!

    An idea I saw on TV was to make cheesecake in individual cake cases - they looked really nice with a cherry topping and saved an awful lot of cutting cheesecake into slices.

  27. I love taking a Yoplait yogurt and mixing in some Cool Whip - whip together really well, then pour into a graham cracker pie crust and freeze it. It is SO delicious and light! You can do that with any kind of yogurt, or you can buy vanilla ice cream and crush Oreos or any other candy/cookie into the ice cream, mix it up and pour it into a pie crust and freeze it. Delish!

  32. Oh, YUM!!! I've been loving Nabisco graham crackers lately -- just plain. My son spreads them with Nutella, and makes a graham-Nutella sandwich... :)

    And oh, I'm drooling over Cherry Garcia... mmmmmm!
