Today was a snow day from school. It snowed nicely this morning but it's since stopped, leaving us with very little accumulation. It's supposed to pick up again but right now it's pretty quiet. I was thinking of getting in the car and going to work, but when I told my husband this and his face fell, I decided to just stay home and continue to keep him company.

I ventured out this morning in the snow and headed to the WalMart which is only about 5 minutes away. WalMart is not my favorite place by a long stretch, but it's convenient and cheap and at 8 o'clock on a snowy morning, the place was empty. I picked up a snow shovel, just in case we might need it, some food supplies and then while strolling through the produce section, decided to get some fruits and veggies that looked good. That's when I started to think about this salad, so I grabbed some goat cheese as well.

This became one of my favorite salads after seeing it at Noble Pig. If you haven't been there yet, you're missing out on a lot. I love Cathy's site, and after I found this salad last fall, I find myself craving it every now and then because it is just so GOOD!

The salad looks divine. Goat cheese is a staple at our house.
Goat cheese is sort of tangy and is the consistency of cream cheese but just a little drier. It's got a high fat content so I don't use much. I think people either love it or hate it, but it's a taste all its own and adds an excellent balance to this salad. I haven't tried goat cheese on anything other than salad, however. Yet.

I am yet to try goat cheese. I branched out and became accustomed to Feta this past summer when we went to a Greek Restaurant a friend of the family owns down on Crescent Beach. It was lovely! I will have to give this salad a try! The vinagrette sounds tasty!
I wish I could join you in your snow day! It snowed here last night, and has been all day, but not enough to justify staying home from work. Maybe tomorow....
That would make a perfect lunch for today or any other day for that fact. Me, I just had a yogurt shared with my lil jack!

Doesn't she just have the best recipes! And I love goat cheese or feta cheese to top off a salad. A few walnuts, pecans or strawberries on top are wonderful as well.

The salad looks wonderful. If I didn't tell the girls it was goat cheese until after the fact, I could probably get by with it. Great idea!

Looks delicious good (as my 3 yr old would say). I love goat cheese. I discovered a brewery a while back that had the oddest pizza I just had to try and it is now my favorite. It is called a pesto veggie pizza. With pesto instead of pizza sauce, artichokes, kalamata olives, pine nuts, roast red peppers, goat cheese, zucchini, and I can't remember what else, it is fabulous!
This salad is divine! Yes Cathy has the greatest recipes and I love her site. You should try her low fat pancakes with the blueberry sauce. To die for.

Thanks, all. That was an excellent salad. And because I ate so healthy at lunch, I had Pioneer Woman's new burger for dinner. Oh. My. God. Roll me out the fricken door. Carmelized onions and a bit of bleu cheese. Damn that woman.

Salad looks absolutely delicious. I know what you mean about craving something ... I sometimes get a craving for fresh fruit and veggies and when I do, I throw blackberries, raspberries, mandarin slices and toasted almonds in with some baby spinach and add some raspberry balsamic vinegarette dressing. Your salad looks like it could do the trick too - and the goat cheese adds the yum!

That salad looks mighty good, is that pears I see, I love pears on a salad....and believe me the Walmart grows on you...I wouldn't set foot inside one a year ago now I'm there a few times a week. Where else can you buy a freshly baked loaf of French bread for $1.50 these days...and it's a big loaf!!

A day late .. AND lucky for me I was just finishing off my bowl o'grapes when I read this or I would surely have needed to make one for myself. Actually before I had the grapes I had an eggplant/mozzerella/lettuce/tomato with pesto on toasted sour dough ... Carlos in our amazing cafeteria made it just for me.... no, he doesnt have a blog
