Caprese Salad

I love this salad and was craving it today after I began thinking what I’d do with the two tomatoes that my husband picked from his garden this morning.

The only ingredient I was lacking was the mozzarella cheese. A quick trip to the store fixed that.

When I bit into this delightful medley of summer flavors, it was like a party in my mouth. It tasted so good that I felt like laughing but I had a mouthful of food.

It started with my husband’s tomatoes, fresh from the garden.

Arrange tomatoes in a single layer on a plate. Top with sliced mozzarella cheese. Drizzle with olive oil and balsamic vinegar. Sprinkle kosher salt and some freshly ground pepper, then toss on some shredded basil.

It’s a wonderful combination of flavors that’s perfect for summertime.

One of my two favorite summer salads. I've had fresh tomatoes for about a month now. A few still left on the vine but with temps above 110 they're just about all gone.
Try this salad sometime. Tomatoes, peaches, thinly sliced red onion, basil and your favorite EVOO. I alternate this one and caprese pretty much daily!

One of my all time favorite summer salads, too. I have lots of basil, perhaps I will be able to pick up some tomatoes tomorrow at the FM.

Nice and light ... I've had that several times when it's hot. (haven't made it myself though)

It's one of my favorite easy-good-for-you dishes. Even my picky 14 year old loves it. We drizzle with olive oil and fresh pepper.

Between me and the grocery are 2 mountains so there's no dashing -smile-. I do eat this salad, quite frequently, but use Parmesan, feta or whatever cheese is in the fridge.

Looks fantastic Kate - I'm working on perfecting my balsamic vinaigrette - I might have it down by the time I have ripe tomatoes, which is going to be awhile still.

Oh that looks wonderful. I've only recently discovered (thanks to my son) how delicious basil is when added to a salad. This looks like something I must try. Thanks for that and Happy 4th!

:) this is the 2nd one i've seen this morning. i'm weird in that i don't care for raw tomatoes but i love the cheese, basil and balsamic.

Yum! The only thing that can improve a homegrown tomato would have to be salt, mozzarella, and basil:)

Well I don't like tomatoes (I know, weird) but I make this all the time with roasted red peppers instead. It is almost as good as chocolate. Almost.

My all time favorite way to eat tomatoes....you have to have good Italian bread to dunk in the vinegar...Have a great 4th of July!
